The Owlbear Egg in Baldurs Gate 3 can be found in the Owlbear Nest, a cave located to the east of Blighted Village at around X:90, Y:442. Once players have obtained the egg, they have three options available to them:

Use the Owlbear Egg as a Camp Supply: The egg can be used to facilitate a Long Rest in Baldurs Gate 3. The Owlbear Egg will be put directly into the Camp Supply Sack, and players should take care not to use it when performing a Long Rest. Players that do not check their auto-selected Camp Supplies may find that they have accidentally consumed the Owlbear Egg, causing it to no longer appear in their inventories.

Sell the Owlbear Egg: The Owlbear Egg can be sold for 750 Gold, which is a decent sum for something players stole from a dead Owlbear.

Use the Owlbear Egg to Trick Lady Esther in the Steal a Githyanki Egg Quest: While progressing through the Githyanki Creche storyline, players will eventually run into an NPC called Lady Esther. Lady Esther can be found at the Rosymorn Monastery Trail and tasks with, among other things, stealing a Githyanki Egg from the Creche. Players can use the Owlbear Egg to either trick or convince Lady Esther and still earn their reward. However, this requires players to carry the egg around until Act II.
It is worth noting that there are no known uses for the Owlbear Egg other than the ones mentioned above.
