As an ethnic slur, it refers to a German, particularly a German soldier during World War I and World War II. Its use is considered offensive by most Germans.

As a food, it refers to pickled cabbage. Translated literally, it means “sour cabbage.” The sour part comes from pickling cabbage with brine. The brine helps extract water, which helps dissolve the sugars. Kraut can be used in a variety of recipes, from soups to salads, entrees to appetizers. It is similar to kimchee made by fermenting cabbage in brine and red pepper. Kraut, just like sauerkraut, has plenty of health benefits. Depending on the vegetable used, it can be rich in nutrients like vitamin C, vitamin K, and fiber. Kraut can also contain probiotics that promote gut health and improve digestion.
