A2 milk is a variety of cows milk that mostly lacks a form of β-casein proteins called A1, and instead has mostly the A2 form. It was brought to market by The a2 Milk Company and is sold mostly in Australia, New Zealand, China, and the United States. The A2 Milk Company produces milk from cows that only produce the A2 protein and no A1, which is believed to be easier on digestion and may help some avoid stomach discomfort. Most commercially available dairy products still contain a mixture of both A1 and A2 proteins, as most milk comes from Holstein-Fresians, which produce the highest levels of A1 beta-casein. The A2 Milk Company tests the DNA of their cows to ensure they only produce milk that contains A2 protein and test the milk after production to ensure it does not contain A1 protein. A2 milk is a good source of protein, containing 8 grams per 8-ounce glass, and is jam-packed with important vitamins, minerals, and macronutrients.
